醬醬知多少(一) 法式克林姆醬Cucina Mia
答應Fei這個週末要把卡士達醬打出來，一翻書之下才發現自己先前想偏了。比較適合包在麵包裡的，應是法式克林姆醬：French Pastry Cream / Creme Patissiere。卡士達醬（custard），或稱英式蛋奶汁，質地比較稀些，比較適合當蛋糕或布丁上的淋醬。
雖然兩者的材料大同小異，正是我常說的「西點三元素」，光這三樣，就可以成就凡非的純樸美味：雞蛋、牛奶（或奶油）、糖。而這兩種醬雖因做法和配方比例的不同，質地略有差異，美味卻不分軒輊！
很想買一送一，一口氣把兩種醬一起打出來，時間實在有點不夠，還是等下回吧。還有法式奶油餡（French Butter Cream）哪^^
§法式克林姆醬§
材料
鮮奶500c.c.
蛋黃4個
細砂糖125克
低筋麵粉70克
香草精2茶匙
蘭姆酒1茶匙
做法
1. 蛋黃和糖攪打均勻後加入麵粉拌勻。
2. 鮮奶煮至微滾，熄火，加入香草精拌勻。
3. 將煮滾加了香草精的鮮奶，分次倒入步驟1的蛋黃麵糊中，輕輕攪拌均勻。
注意注意：一定要分次，一次只加一小部份。絕不可以一口氣全數倒入，會跑出蛋花湯呀。我通常分個3次左右。
4. 全部拌完後，再拿回爐上，開中火，不斷攪拌，直到小滾並呈濃稠狀，立即離火，倒入另一個容器，浸泡冷水備用。
最後一個步驟＜離火，倒入另一個容器，浸泡冷水備用＞看似麻煩，卻絕不是多此一舉。
如果不這樣，鍋子會繼續加熱，有過度加熱的可能。真想偷懶的話，我會省掉＜倒入另一個容器＞這步，但仍要立即離火，立刻泡入冷水。
5. 加入蘭姆酒拌勻即成。
6. 喜歡葡萄乾的朋友可以再加入150克的酒漬葡萄乾。

食譜配方來自我的烘焙老師郭滿蕙的著作：派＆薄餅。另參考了這份英文食譜。
如果因為不想給小朋友吃到酒，也可以不放蘭姆酒。但我一定要說：＜西點三元素＞只要再搭上蘭姆酒，美味馬上再升好幾級啊。即便我用的是公賣局出的，最普通的，一瓶才幾十元的蘭姆酒，效果一樣很好ㄋㄟ。
酒漬葡萄乾的做法也很簡單。葡萄乾在滾中水稍微煮一下，撈出瀝乾，用蘭姆酒浸泡。泡越久，酒味越濃呢。
重點在“撈”出“瀝”乾這兩個字。
許多食譜用的是類似過篩麵粉的過篩法，整鍋倒到另一鍋同時用篩子過瀘。
先用水滾煮的目的除了要去除多餘的糖份以外，還有去除雜質的用意。所以要用撈的，而不要用倒的。用撈的，才不會撈到太多雜質；用倒的會連沈在底部的雜質全數一起倒進來。
